Caprese Chicken Skewers Recipe

1. Prepare the Chicken:
o In a large bowl, combine the olive oil, balsamic vinegar, minced garlic, salt, and pepper. Add the chicken cubes and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
2. Assemble the Skewers:
o Thread the marinated chicken, cherry tomatoes, fresh basil leaves, and mozzarella balls onto skewers, alternating each ingredient.
3. Make the Balsamic Glaze:
o In a small saucepan, combine the balsamic vinegar and honey. Bring to a boil over medium heat, then reduce the heat and simmer for about 10-15 minutes, or until the mixture has thickened to a glaze consistency. Remove from heat and set aside.
4. Grill the Skewers:
o Preheat your grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
