Cowboy Quiche Comfort
Preheat your oven to 190°C (375°F).
In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
Add the sliced onions to the skillet and cook in the bacon fat until they are caramelised and golden brown, about 10-15 minutes. Remove from the heat and let cool slightly.
Roll out the pie crust and fit it into a 9-inch deep-dish pie pan or quiche dish. Trim the edges and set aside.
In a large bowl, whisk together the eggs, heavy cream, salt, black pepper, and ground nutmeg (if using).
Add the cooked bacon, caramelised onions, grated cheddar cheese, and grated Parmesan cheese to the egg mixture. Stir to combine.
Pour the filling into the prepared pie crust, spreading it out evenly.
Bake in the preheated oven for 40-45 minutes, or until the quiche is set in the centre and the top is golden brown.
Allow the quiche to cool for 10 minutes before slicing and serving.
