Delectable Tiramisu Cupcakes
1. In a small bowl, stir together the brewed espresso, sugar, and coffee liqueur (if using) until the sugar is dissolved.
3. Prepare the Mascarpone Frosting:
1. In a large mixing bowl, beat the mascarpone cheese until smooth.
2. In a separate bowl, whip the cold heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
3. Gently fold the whipped cream into the mascarpone cheese until fully combined and smooth.
4. Assemble the Tiramisu Cupcakes:
1. Use a fork or a skewer to poke several holes in the top of each cooled cupcake.
2. Spoon the espresso syrup over the cupcakes, allowing it to soak in. Use as much or as little as you like, depending on how strong you want the coffee flavor.
3. Pipe or spread the mascarpone frosting onto the cupcakes.
4. Lightly dust the tops with unsweetened cocoa powder.
