Italian Apple Cake Delight
Preheat your oven to 180°C (350°F) and grease a 9-inch (23 cm) springform pan.
In a large bowl, toss the thinly sliced apples with the lemon juice to prevent browning. Set aside.
In another bowl, beat the sugar and eggs together until pale and creamy.
Add the melted butter, milk, and vanilla extract to the egg mixture, mixing until well combined.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Gently fold in half of the sliced apples into the batter.
Pour the batter into the prepared springform pan and smooth the top. Arrange the remaining apple slices in a circular pattern on top of the batter.
Sprinkle the 2 tablespoons of granulated sugar evenly over the top of the cake.
Bake for 40-50 minutes, or until a toothpick inserted into the centre of the cake comes out clean and the top is golden brown.
Allow the cake to cool in the pan for 10 minutes, then remove the sides of the springform pan and let it cool completely on a wire rack.
Serve the cake dusted with powdered sugar or alongside a dollop of whipped cream or vanilla ice cream if desired.
