Oatmeal Cake Comfort
Preheat your oven to 180°C (350°F) and grease a 9x13-inch baking dish.
In a medium bowl, combine the rolled oats with the boiling water and let it sit for 20 minutes to soften.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition, and mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the soaked oats until the batter is well combined.
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 30-35 minutes, or until a toothpick inserted into the centre comes out clean.
While the cake is baking, prepare the topping: In a small bowl, mix together the melted butter, shredded coconut, chopped pecans (if using), brown sugar, and milk until well combined.
Once the cake is done, remove it from the oven and set the oven to broil. Spread the topping evenly over the hot cake.
Broil for 2-3 minutes, or until the topping is bubbly and golden brown. Watch closely to avoid burning.
Allow the cake to cool slightly before serving. Enjoy warm or at room temperature.
